  1. Good point. I used home made paneer, which is extremely soft. I just mash it with my fingers. The one that you are describing needs to be coarsely grated before using in this recipe.

  2. I can see the mashed paneer in the photos, but I can’t see how you did it–the paneer I buy is shrink-wrapped in a long block, and it has the rubbery texture of an art eraser.

    I tried cubing it and pressing with a potato masher, but most of it just stretched oblong, and one piece bounced up and away to be snatched up by my eagerly awaiting dog Pepper (canis morselum gobblus).

    Breakfast was still to be had, though, I just ended up dicing the paneer very fine. I gotta get myself some drier paneer…
